Happy Wednesday great foodie friends. It has been some time since my last post but life just sometimes hops in front of passions. That said my family is my passion and I would t change a thing.

This years 19th Annual  Golden Plates awards are out and what I love about them is though we are all not necessarily food critics, we do know what we like and what we don’t! We all spend to much of our honestly made $ to throw it away so we do pay attention to what we like and what we don’t.

This years awards notably have many of my favorites but there are also so many that no one person could ever try them all in one year (well I suppose it’s possible but not probable)

Teach your kids to cook – choices 


Happy Monday good foodie friends,

Just a short blog post to start off your week the right way. The title could easily read teach your kids to cook and re-teach yourselves to prepare real food that feeds the body and the mind. 

Processed processed processed hits us everyday for so many reasons. 

We are to busy, we didn’t have time, it’s really good, it was less money

Whatever the reasons are we always have to remember that everyday we have to fuel our bodies and minds why not do it with food that feeds the body rather than damages the body? 

I mean really tell me you don’t sometimes put more energy into whether to use premium gas or synthetic oil for your car so that it runs better! Is as much thought going into what you nourish yourself with? 

I don’t mean to preach but rather want to remind us all that as long as the burgers, fries and shakes are the exception and not the rule all should be good but don’t forget the rule should be to eat real food that feels good health for a long time.

   
 
Simply make it a weekly habit to plan your meals, visit a farmers market or a great corner market where you can buy the rights ingredients. Most cities and Vancouver Metro area is no exception is peppered with great farmers markets all year long as well as some great artisan farmers and producers of great quality choices. 

Get to know where your food comes from and I promise you the flavors will set a new level of expectations for you and your family!

When we cook with our kids it plants the seed of good habits and then we all realize that we have the confidence and ability to cook. Have fun and make things your own… Try different things and new spices or herbs to kick up dishes! 

We also have some great

Farm to Table” style restaurants that excel in local ingredient offerings prepared in healthy ways. Eating healthy doesn’t mean that your aren’t eating tasty delectable meals. 

   
   
Real flavor comes from fresh ingredients, spices and herbs. 

The dessert above is fresh pears with parmigiana cheese and 25 year balsamic and delectable isn’t a strong enough word for how good it was. 

   
   
Don’t get me wrong and please know that I am totally just reminding you all to try and think more about what you eat and where your food comes from… Balance is the spice of life and fun should be had but treat the body as well as you do your car- “garbage in=garbage out”.

Have a great rest of the week and do get out and enjoy! Just choose what you want after thinking about it!

Fable Kitchen – Chef Trevor Bird


Happy Monday Fellow foodie friends,

I truly can’t believe that this blog has taken me so long to post!
I truly recommend that you get down to Fable Kitchen and try what is sure to be one of those happy shuddering culinary moments for you!

As I have mentioned before we are so very fortunate to have a culinary disneyland unfolding more and more each day in the Vancouver lower mainland. Trevor Bird – one of Top Chef Canada’s top competitors opened Fable in approx April 2012.

The restaurant is is the perfect size and laid out in a comfortable way for you to enjoy food and drinks with friends or co-workers as well as a nice romantic dinner with your love.
If you are fortunate enough to be able to sit at the “chefs wood” then you are in for a treat.
Whether you see Chef Trevor Bird or any of his team commanding the kitchen you will see the workings of a well oiled (olive probably) kitchen machine.
You will watch the Culinary magical fun unfold right in front of you. There is a definite order to what happens from the start right to when the plate is set to come to your waiting a eyes and taste buds. I saw every plate inspected and quality checked and siting for no longer than maybe a minute before it was lovingly delivered for your enjoyment.
I was lucky enough to visit Fable a few times and happily waited for the chefs wood.
First up, was “canned tuna“. Don’t be fooled or timid about what you see on the menu. Trust your waiter or chef recommendations, you won’t be disappointed.

Another fantastic appetizer was the halibut collar lettuce wrap
If they were out of collars, it was halibut cheeks up next. This magical twist on lettuce wraps was truly a culinary tantalizer of an appy!

Served with butter lettuce and a perfectly balanced sweet chili sauce (housemade of course) it was the perfect tasty start to our meal.

Next up was the Steak Frites
Triple cooked potatoes, mushroom, broccolini
for $24. It was perfectly cooked to order and melt in your mouth tender served over And unbelievably mouth tantalizing black Pepper Jam- (buy some to take home, you won’t regret it I promise) 

   

 

If the flavor a that just danced across our taste buds weren’t enough it was now time for desert! Yes desert but “must try” unique offering. 

S’mores –

Yes a campfire special but done Fable style with house made brownie and marshmallows- delectably and perfectly rich. 

Lemon Meringue pie- 

Also Fable style- a perfect balance of creamy lemon, crumble and toasted Mirengue. 

   
   A perfect end to a memorable meal.

Merriman’s – a hidden gem in Maui


Aloha great Foodie friends,

A little gem hidden in paradise was what we found last night. From the moment you enter the views and atmosphere fill your eyes.

Merriman’s: One Bay Club Place, Lahina, Hawaii

Don’t make the mistake of driving to Lahina proper as this gem is in the other direction in Kapalua.

The handcrafted drinks are a great surprise along the lines of a “Speakeasy” cocktail truly made from scratch and the difference is noticeable.

Merriman’s Mai Tai- El Dorado rum, fresh lime, orange curaçao and lilikoi foam (a passion fruit foam) try the foam before you mix it in the drink then blend all the flavors together- delectable!

Parmesan truffle fries – the perfect starter to have with your handcrafted sips- a perfect blend of flavors and truffle used the right way…not overpowering.

Next up was the entrees.

USDA Prime grade Fillet of Beef (GF)- a perfectly grilled medium rare with pefect char, garlic whipped potatoes, kula green beans, Savoy cabbage topped with mustard brown butter emulsion. 

The perfect bites always exist when flavor depth and textures meet. Every bite of this delectable dish was filled with flavor leaving you wanting for the next bite.

Lamb- I am going based on memory for all that was on this plate, but truly it was definitely a culinary wow in my books.

The lamb was “SousVide” (this is a method of cooking in an airtight plastic bag and placed in a low temprature controlled water bath) then finished to a perfect medium rare – medium (as requested) on the grill. Served with jalepeno whipped potateos, perfectly cooked kula green beans, creamed corn and what seemed to be a fresh salsa.

Every bite touched a different taste bud if that’s possible. Well done!

Dinner was served with a perfect sip of Heidi Schrock Austrian rose.


To finish off our Hawaiin themed dinner was:

Maui Gold Pinneapple and toasted macadamia nut bread pudding- 

A perfect blend of Hawaiin flavors coupled with a traditional comfort food dessert topped with rum sauce and Haupia (coconut) icecream. Delectable!

Sunterra Market – an experience you must try!

From the very moment you walk through the door you will know that you are about to experience something different, something unique and comforting at the same time.

If you just stood and closed your eyes and just let your senses take over you may think you are walking through a European market…..
The atmosphere in Sunterra is similar to a sprawling “market” with a European flair.
I have never seem such a well oiled machine of offerings from groceries, fresh meats, pork, baked goods, fresh fruits and vegetables….. And much more!

Downstairs you can follow a long wall of fresh offerings starting at the “deli” style case and then over to the cut meats, pork of all types and poultry. Continue on to the bakery and see the busy pasty chefs fashioning delectable treats all day!

As you wander through the different sections of the store you will be amazed and impressed at the buzz and the peace that you feel at the same time.

Some might be coming in to grab an absolutely delicious meal (breakfast, lunch or dinner or snack) to eat in or to take out, or head to the 3rd floor to the sprawling restaurant with different flavor stations with the days specials all made from accredited chefs or culinary trained cooks….. Don’t be fooled or scared about the line of people as this highly experienced crew will get your extremely delicious meal in your hands or to your table quicker than you would think.

Later in the afternoon (after 4 I believe the eating area around the corner of the restaurant turns into a lounge for you to enjoy even more great culinary treats and possibly pair it with one of the nice wines off what looks to be a very nice wine selection.

Today, Pickled Chipotle beef brisket with rice or potatoes and fresh vegetables mmmm…. So many flavors came through!

On my way back down to the main level I was immediately drawn to a test kitchen that I learned performs cooking classes and demonstrations among other fun events…. What a great idea for inspiring amateur cooks or aspiring foodies……

I am told that the managing family members continually look to enhance the experience in a completely professional and traditional manner. The family has built a reputation in the farming business through humane and responsible practices that they have brought that same approach directly into all practices in their retail stores and restaurants.

Sunterra farms provide all of the beef, and pork products in their stores. They work tirelessly to provide exceptional value (you WON’T believe the prices I promise, the value is exceptional) exciting and fresh products, time saving services and competitive prices.

Due to the fact that they supply much of their farm products to the store along with their best practices you can be sure there is near no waste in their stores.

Be sure to save enough time to eat some great food and shop for something special to take home.
On my way out I was tempted to pick up a fresh daily packed bag of all o the fixings for a burger dinner for 4- the bag included fresh burgers, tomato, lettuce, pickles, onions and fresh buns (I might have missed something) all for only $11.00!
I also learned about what wonderful community spirit that the Sunterra family has and how during different times of the year they reach out with unique offerings and support to the greater Alberta community.
I am fairly certain that I heard that on Thanksgiving that countless pieces of pumpkin pie was handed out on Sunterra’s dime.
