A perfect pasta for mid-week
Happy Tuesday night foodie friends.
Mid week I usually try to stay healthier so I don’t want to heavy an evening meal.
I had this pasta tonight and it warmed my heart and soul…. Comfort food Italian style.
Pasta with fire roasted Italian tomatoes, garlic and peperoncino.
I used whole wheat pasta but please use any of your favorite pasta.
In a separate pot I put a beautiful can of “fire roasted” tomatoes along with peperoncino, minced garlic, Italian seasoning, olive oil with peperoncino and capers.
Then top it off with your favorite cheese…. I used parmigiana as it always makes me smile.
Serve with a fresh piece of garlic bread or focaccia and warm the soul.
you gotta try this!
Another great food journey! Thank you… Looks great

As I said in my recent ‘Foodstuffs’ post on Fresh Fenugreek Leaves (Methi), I decided to use the bunch I had just purchased in a loose version of an Indian dish called ‘’Methi Gosht’. ‘This dish is very similar to another Indian curry called ‘Saag Gosht’ (or ‘Palak Gosht’) which uses spinach instead of Fenugreek. I make that dish quite frequently, although I often use beef instead of the traditional lamb, and it is a favorite at our house. I decided that I would also use beef for this particular experiment and, as I will explain below, I make a couple of small departures from the usual Indian method of cooking such dishes…
