A perfect pasta for mid-week

Happy Tuesday night foodie friends.

Mid week I usually try to stay healthier so I don’t want to heavy an evening meal.
I had this pasta tonight and it warmed my heart and soul…. Comfort food Italian style.
Pasta with fire roasted Italian tomatoes, garlic and peperoncino.
I used whole wheat pasta but please use any of your favorite pasta.
In a separate pot I put a beautiful can of “fire roasted” tomatoes along with peperoncino, minced garlic, Italian seasoning, olive oil with peperoncino and capers.
Then top it off with your favorite cheese…. I used parmigiana as it always makes me smile.
Serve with a fresh piece of garlic bread or focaccia and warm the soul.
you gotta try this!

Happy Sunday all!
Remember that We all start the enjoyment of our wonderful foods with our eyes first! The look upon the faces when they first cast a glance is what I live for in watching how our foods when made from the heart and soul through the passion light up and connect you with others.
I was so excited to try this treat with my daughter and we both were so happy doing it together and seeing the smiling faces! please absolutely know that we both realize that it doesn’t end with the eyes….it tasted even better than it looked!
Let me know if you want me to share the recipe with you, it would be my pleasure. We do take seriously the statement from Chef Buddy Valestro when he says that the flavor in a chocolate dish isn’t directly from the chocolate, it is from the cocoa. And…

As I said in my recent ‘Foodstuffs’ post on Fresh Fenugreek Leaves (Methi), I decided to use the bunch I had just purchased in a loose version of an Indian dish called ‘’Methi Gosht’. ‘This dish is very similar to another Indian curry called ‘Saag Gosht’ (or ‘Palak Gosht’) which uses spinach instead of Fenugreek. I make that dish quite frequently, although I often use beef instead of the traditional lamb, and it is a favorite at our house. I decided that I would also use beef for this particular experiment and, as I will explain below, I make a couple of small departures from the usual Indian method of cooking such dishes…

Whatever you do please if you can afford it buy the best quality cocoa that you can, it makes all the difference and is worth it! We use either Valrhona or Bensdrop Dutch Cocoa and the flavor is intense and bold but just perfect.

Two days ago, I received an e-mail from Mardi Michels at Food Bloggers of Canada telling me that she wished to make my blog the focus of a ‘Featured Members’ posting at their site. I have been a member there for several months now and, as you can imagine, the news pleased me very much.

The Food Bloggers of Canada site is essentially where Canadian Food Bloggers can list their blogs (free of charge) and, each week, the team there runs a feature reviewing one of the member’s blogs (such as the humble offering by yours truly). The site also provides quite a lot of useful resources for bloggers and they offer a forum for members to interact. Naturally, the primary focus is on Canadian ‘bloggery’ but food is, of course, universal so people from other countries will surely find something to interest them at many of the blogs in…
